The twisted, cork-screw fusilli pasta is said to have many translations. Pick from “rifle,” “funny spindles” or “twisted spaghetti.” But just picture a barrel with screw-shaped grooves. That spiral has more than décor to its credit. The shape allows sauces to easily cling to it as it do with this “Pasta con salsa di zucca arrosto” (Roasted Squash Sauce and Pasta) dish. The pasta goes back a ways into ancient history, to 1550 in Granducato di Toscana, before Italy was a united country. Through the years, it has become one of the most appreciated short-shape pastas, especially with cream sauces and vegetables. It’s the pasta of choice in “fusilli ai porcini” (fusilli with boletus mushrooms) and “fusilli ai peperoni” (fusilli with peppers). Both sauces incorporate cream and unsalted butter. The pasta type also bakes well in casseroles.
