About Linguine
It would be easy to mistake linguine (“little tongues”) for fettuccine, but look closely. Linguine is slightly curved, like a tongue, whereas fettuccine is flat. As a medium-thick pasta, linguine was made for fish sauces and is the choice for Italy’s popular “linguine con scampi e zucchine” (linguine with king-prawns and zucchini). Not only is it present in seaside restaurant dishes, it originated in the 19th century in Genova, one of four Maritime Republics, in the Linguria region.
