About Pennoni
Pennoni, which means “large quills” is simply a larger version of penne pasta and also comes from Veneto. It’s a “special-occasion” pasta, usually in elaborate recipes that require several stages and a long time to prepare. It’s the favorite pasta choice in “pasta al forno” (oven-made pasta). That recipe combines the pasta with Bolonnaise sauce, béchamel, Parmesan and various ingredients appropriate to the region it is prepared in. Some recipes might incorporate ham, fontina cheese, broccoli, boiled eggs or mushrooms – as in Herb Infused Cream, Porcini Mushroom and Veal Pasta.
