About Rigatoni
The little “chew” to these big tubes makes rigatoni a popular pasta type in Italy. It is similar to penne pasta, in that it is a ridged tube, but rigatoni is not cut on an angle, and it is slightly curved. It comes from the Italian term “rigato,” which means “striped.” The design and texture are great for chunky meat or vegetable sauces. It is a brother to tortiglioni pasta; the two are easily used interchangeably in recipes. In one popular preparation, “rigatoni all’ amatriciana” rigatoni is matched with a sauce of plum tomatoes, crushed red pepper flakes, pancetta or bacon, and grated Romano cheese.
