Basil Almond Pesto Tortiglioni with Italian Sausage
Tortiglioni al Pesto di basilico e mandorle con salsiccia Italiana
Ingredients
- 16 oz. Pasta Lensi Tortiglioni
- 3 garlic cloves, crushed
- 1/3 cup toasted sliced almonds; reserve 1 Tbsp for garnish
- 1/2 cup extra virgin olive oil
- 1 cup fresh basil, stems removed
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 lb mild Italian Sausage, cooked and sliced
- Salt and black pepper, to taste
Wine Pairing: Nebbiolo d’Alba (Piemonte Region)
Recipe Serves: 5-6
Directions
Cook pasta according to directions. Drain and set aside.
Combine garlic and almonds in a food processor or blender. Process 10 seconds or until ingredients are finely chopped. Add olive oil and basil; process additional 20 seconds until nearly smooth. Pour mixture into a large skillet with the sausage, cream and hot pasta. Cook 1 minute or until pasta is evenly coated. Stir in cheese and season to taste with salt and black pepper.
Sprinkle with remaining toasted almonds and serve immediately. Mangiare bene.
