Gigli with 4 Herb Sauce
Gigli con salsa alle 4 erbe
Ingredients
- 16 oz. Pasta Lensi Gigli
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 2 Tbsp. fresh mint leaves
- 1 Tbsp. fresh thyme leaves
- 1/4 cup plus 1 Tbsp. extra virgin olive oil, divided
- 3 cloves garlic, minced
- 3 cups chopped ripe tomatoes (chopped, reserving juice)
- Salt and black pepper, to taste
Wine Pairing: Cabernet Sauvignon (Trentino Alto Adige Region)
Recipe Serves: 6
Directions
Cook pasta according to directions. Drain.Finely chop herbs and place in small bowl with 1/4 cup olive oil; set aside. Heat 1 Tbsp. olive oil in a saucepan over medium-high heat. Add garlic and cook for 1 minute. Add tomatoes with juice, salt and pepper. Simmer for 20 to 25 minutes or until thick.
Toss pasta with tomato mixture. Add herbs in oil and stir well. Mangiare bene.
